Weekend special: Bread specially made with Heineken yeast

For four days only, gourmets will have a chance to try Heineken bread made using the Amsterdam-based brewer’s secret A-yeast which has been the basis of its beers since the end of the 19th century.

Master baker Mark Plaating is baking the Heineken bread at his Vijzelgracht premises just down the road from Heineken’s original Amsterdam brewery, now the Heineken Experience.

‘Heineken’s A-yeast is completely different from the other yeasts I use for baking bread. Bakers yeast is developed to create large volumes quickly. The A-yeast takes much longer. You can pull up a chair to watch it rise,’ he explains.

Luckily using the slow-rising yeast pays off: ‘There’s much more flavour to the bread. After a lot of experimentation, I think we’ve come up with a fantastic loaf,’ he said.

The bread will cost €2 a loaf and the proceeds will be donated to the Dutch bakers guild, the Financieele Dagblad said.
