Chef and cookery book writer Yotam Ottolenghi will be opening his first restaurant in the Netherlands in the spring of 2026, he said on his website.

The chosen venue is the Conservatorium Hotel in Amsterdam, which was taken over by the Mandarin Oriental Group last year.

Ottolenghi already has 11 restaurants, 10 of which are in Britain.  The Amsterdam location will be his second on the European mainland, along with Geneva.

Amsterdam is well-known territory for Ottolenghi, who lived there in 1995 as a student.

“Returning to Amsterdam is a bit of a walk down memory lane for me. In the mid-90s, I lived there while studying for my master’s, and it was a wonderful time – everyone sitting on doorsteps drinking wine, riding their bikes around town. I loved it!

“Now, 30-odd years later, we’re opening our second-ever international restaurant within the beautiful Mandarin Oriental Conservatorium, Amsterdam, just a stone’s throw from the Van Gogh Museum and not far from my old neighbourhood.

The food, he said, will follow the same philosophy as his London spots. “Vegetables at the centre, bold flavours, plenty of ferments and pickles. I really can’t wait,” he told Condé Nast Traveler.

Since his breakthrough as a cookery book writer in 2008, Ottolenghi has sold over five million books.
