Scheveningen fishmonger has this season’s best herring: AD
A fishmongers in Scheveningen has the best herring in the Netherlands this season, according to the AD’s annual herring test.
The Gebroeders Simonis team put their success down to hard work, good business instincts and top quality products. ‘The Dutch are prepared to spend money on fish but it has to be the best,’ the brothers say. ‘That is what we want to offer.’
The Simonis brothers were the only fishmongers out of 153 visited by the AD to score 10 out of 10.
The start of the herring season was delayed this year and the quality of the fish in the early days was only average, the AD says. Nevertheless, a surprising number of outlets managed to score at least an 8.
Given the circumstances, the Gebroeders Simonis fish was ‘very good, excellently prepared and with a creamy accent,’ testing panel Aad Taal and John Oosterhuis told the paper.
Hollandse Nieuwe is the name given to young herring caught between mid-May and the end of June which have a body fat percentage of at least 16%. The fish are gutted and salted but the pancreas containing an enzyme which helps the fish to ripen is left in place.
