The Avocado Show, a restaurant in Amsterdam’s trendy De Pijp area, opened its doors only six months ago, but has plans to expand internationally, eyeing 100 outlets within five years, the Parool has reported.

The fast growth is being made possible by an investment by Shawn Harris, the woman behind Nature’s Pride, one of the largest avocado suppliers in the world. ‘She supplies us with avocados and saw the international possibilities,’ owner Ron Simpson said.

The first €2m is already in hand, the Parool said and Simpson expects the figure to be more than doubled within the next five years.

Avocados are increasingly popular in the Netherlands. Nearly 40 million kilos were eaten in 2016, up from only 10 million kilos in 2008.
